To several people in Memphis, there is an all-out war about who has the best BBQ in the city. It would be impossible to eat at every establishment in town and anyone who says that they have is pulling your chain. The Memphis Flyer recently had a "Best of Memphis 2010" poll and the Bar-B-Q Shop placed 3rd for Best BBQ, being beat out by Central BBQ. http://www.memphisflyer.com/memphis/best-of-food-and-drink/Content?oid=1684382 Make no mistake, however. This opinion is widely argued by several people that I have met. Many believe that the Bar-B-Q Shop has the best ribs in town and the more that I go there, the more I completely understand why.
I have been to the Bar-B-Q Shop several times and it seems like the experiences just get better each visit. The ribs are incredible. There are only a few other places where I have had ribs as tender as these, most of which were not cooked in a restaurant. These ribs at the Bar-B-Q Shop are as close to home-made as you will find in Memphis. They also have the best BBQ nachos I have ever had. If you get an order, beware that they are a VERY large portion and hard to quit. After sharing a plate of those and demolishing a full order of dry rubbed ribs, I was stuffed.
Another great thing about the Bar-B-Que Shop is their sauce. Their brand name "Dancing Pigs" became a staple to the original recipe back in '95 and it has stuck to their name ever since. They have a mild and a hot, which are, to me, completely different sauces. Both excellent, none the less, but the hot has an excellent kick. When used on BBQ nachos or on ribs, it makes me sweat every time. It has a bold flavor that is unmatched, very original. The hot hides any hint of sugar so it leaves an excellent smokey flavor. It's a thick sauce that coats ribs really well or applies evenly on a plate of nachos. They have been hand-carrying their sauces and rub to 100's of Kroger grocery stores in 5 states for over a decade so it is easy to find in the Memphis area. I encourage everyone out on a mission for the best BBQ in Memphis to try out the Bar-B-Que Shop before settling on what you consider the best of Memphis. You might have been missing out this entire time.
